The Best No Bake No Cheese Pita Pizza – Nutritious, Vegan, Easy

Cheese less, No bake – Hands Down the Best Vegan Pesto Pizza in 10 minutes or less. Enough Said.

This is my soul food! I can have it as a quick bite, snack, appetizer, or as a meal, anytime! This heavenly good pizza works best when you are in a time crunch and looking for a quick fix but also something tasty, filling and nutritious!

Inspired by vegan pie @ Alibi Room located in the Post Alley, downtown Seattle, I have crafted it to perfection and is a prized gem in my recipes treasure box. Back in 2009, I tried the vegan pie for the first time during Valentine’s Day dinner at the Alibi room.

I had never tried a pizza without cheese before that day, so I was a little skeptical, but let me tell you – it was a totally mind blowing and inspiring experience.

It was so good I had to make it for myself and, I did it the very next week! I have made many customization since and my perfected version has several more ingredients, moreover it does not require baking! How do you ask ? Here it goes.

This recipe required pesto sauce. I never buy pesto from stores, always make it home. Many people think that you need pine nuts & basil leaves every time you need to make pesto sauce. Authentically, yes, but that is not the only type of pesto that exists! You can create your own version! Check out Homemade Walnut Pesto Recipe here

I make it from Spinach and a few basil leaves if I have them available. If not, I just leave them out. It tastes different, but super flavorful nonetheless, just another version of pesto sauce. Try making it home the next time and use that to make this pizza. You will not regret it, I promise 

 Whenever I make Pesto Sauce, I make a big batch and freeze it in ice cubes tray or in small airtight containers. This way, you have your own homemade Pesto ready to use with a variety of pastas, pizzas, appetizers, or as salad dressings. Saves time and cost effective! Let’s get started with No cheese/No Bake Vegan Pizza!

Prep + Cook Time: 5 minutes, 10 if making pesto

Servings: Single

Ingredients:

≈ 1 Pita Bread

≈ Pesto Sauce* – 3 tbs (I make it in advance and freeze it)

≈ Olive oil-1 tbs

≈ Italian Seasonings – ½ tsp

≈ Red pepper flakes, salt, pepper – to taste

≈ Sun dried tomatoes – 4-5 Julienne cut slices

≈ Fried onions 1 tbs or caramelized onions -6to 7 Julienne cut slices

≈ Capers – ½ tbs

≈ Boiled Chickpeas – handful

Method:

» Toast the pita bread in mini toaster oven or on a stovetop griddle until the base become crusty

» Spread the pesto making sure all edges are covered.

» Drizzle olive oil, sprinkle Italian seasonings, red pepper flakes, salt, and pepper.

» Spread fried or caramelized onions on the top along with capers and chick peas.

» Microwave for 20-25 seconds or toast it on the skillet. Your choice!

Top it off with “Frank’s Red Hot Sauce” or any other hot sauce you have on hand for an extra kick!
